Gentle dealcoholization through vacuum distillation

At the heart of our production process is vacuum distillation—one of the most innovative and gentle methods of dealcoholization. At reduced ambient pressure, the alcohol contained in the wine evaporates at around 30°C. This allows us to preserve the finest aromas and natural structure of the wine without destroying them through heat. The result: an alcohol-free wine that is every bit as elegant and varietal as the original.

Aroma recovery – the character remains intact

Another key to the quality of our wines is targeted aroma recovery. This involves carefully capturing the natural, volatile aromas that would otherwise evaporate during dealcoholization and returning them to the wine. This preserves the character of the grape variety, the origin, and the style of the wine—authentic, distinctive, and completely natural.

Purity and naturalness without compromise

We deliberately avoid using artificial flavors, colorings, or granulated sugar. Instead, we rely on the power of the grape: to restore some body, fruit sweetness, and balance to the wine after alcohol removal, we refine our non-alcoholic wines with a small amount of rectified grape must concentrate (RTK) – obtained from the respective grape variety, not thermally caramelized, and neutral in taste.

RTK is produced using a particularly gentle process in which water and other ingredients are removed from the grape must, leaving only the natural sugar of the grape. This concentrate gives the dealcoholized wine a smooth texture, slight sweetness, and a harmonious mouthfeel—without any artificial additives.

Sparkling accents for special enjoyment

Depending on the grape variety and product line, a subtle hint of carbon dioxide is added to our wines—such as Sparkling Riesling—to give them a particularly lively, fresh character. This creates elegant sparkling wine alternatives that offer sparkling enjoyment without any alcohol.
